A good SEO can usually gauge how competitive an industry is quickly. Since their workload will dependent on how competitive your industry is your SEO should be able to tell you about how competitive they think your industry is while or before they quote you a price.

What if your business is totally web dependant, such as eBay or Amazon? Or Yahoo or Google?

Do the market analysis and look at different website there you will easily get statistic about the industry. Do you own research too which will give you a better image of the industry.
