For sure the best is that one you enjoy most. The old categories ( beluga , oscitera , sevruga ) are not longer in use as far as wild captures ended up with reserves....no more. Now you have to follow your instinct and taste. Try different caviars, from for example Globalseafoods https://globalseafoods.com/products/wild-sturgeon-black-caviar
